Cookie Cake Recipe
Sports and banquets go together like athletes and grit, moms and laundress, dads and catch, and chocolate chips and cookies. Or, in this case, chocolate chips and cookie cakes. 🙂
This cookie cake recipe is one that my kids absolutely LOVE! Whenever they have a birthday, they request a cookie cake instead of any other type of cake. It is so easy to take to an end-of-season banquet too. You can decorate it in the team's colors easily with just a ziploc bag if you don't have the piping bags handy.
Cookie cake prices aren't too high (depending on where you go). However, the reassurance of knowing you have a consistent recipe that always turns out delicious is priceless! Besides, sometimes you get a last-minute notice (I can't be the only one this happens to!!) that your child needs to take something the next day and if the stores are closed, or you just don't feel like going out one.more.time, you know this recipe is a kid or team favorite!
This recipe is also easy to make. Many of the ingredients are basic enough that they are probably pantry staples.
Cookie Cake Ingredients
- 1 cup, Butter
- 1/2 cup, Brown Sugar
- 2 tsp, Vanilla
- 1 cup, Sugar
- 2 Eggs
- 2 cups, Flour
- 1 tsp, Baking Powder
- 1 tsp, Salt
- 12 oz, Chocolate Chips
Cookie Cake Icing Ingredients
- 1/2 cup, Butter (softened)
- 1 TBS, Milk
- 3 TBS, Cocoa Powder
- 2 cups, Powdered Sugar
- Food Coloring (optional)
Cookie Cake Directions
- Preheat oven to 375.
- Spray a 12″ pizza pan with non stick spray.
- Cream the following ingredients: butter, sugar, brown sugar, vanilla and egg.
- Whisk the flour, baking powder and salt in a separate bowl.
- Stir the dry ingredients into the wet ingredients, then fold in the chocolate chips.
- Spread the cookie cake dough on a greased pan.
- Bake for 10 minutes. Get started on the icing.
- Whisk or sift together cocoa powder and powdered sugar. Depending on the icing colors, you may want to omit the cocoa powder (for lighter icing colors).
- Cream the butter and vanilla in a large bowl.
- Slowly add in the powdered sugar cocoa powder mixture, and milk as needed, until everything is incorporated and frosting is the right consistency.
- Beat the frosting for 5 minutes to make sure it is fluffy. Separate the icing at this step if you plan to have multiple icing colors.
- Transfer to piping bag (or Ziploc bag) and decorate the cookie as you like.
This is worth mentioning, you can absolutely make a cookie cake with premade cookie dough and tube icing. Just skip steps 2-5 and go right into spreading the premade cookie dough on the pan. You can also skip steps 8-12 if you buy the tube icing.
I am not ashamed to say that I've done both several times as well and have ZERO guilt. With practices or games nearly every night of the week, sometimes I forget what I even have in the pantry to begin with! Plus, our kids can't tell the difference between homemade and premade anyway, so whatever I have in the fridge or pantry is what wins out!
As I mentioned earlier, if you have advanced notice you can pick up the premade ingredients. But, sometimes our lil' athletes don't always tell us things until the very.last.minute. 😀
